Let’s start with the name... Back in the day brick & mortars and fast food chains tried to eliminate food trucks. Food truck owners were forced to create an underground scene to protect themselves from being run out of the area. Remember, most of us pop-up when and where we want. Coming up with disguise-able names was just the start of how we survived. Trucks weren’t adorned with food advertisements.

How a flexible menu works for me? Cooking comes naturally to me so I’m pretty confident when a request comes in from any cuisine. Especially when I have to fit myself into a festival. I can look at the truck line-up and change my menu accordingly. Although I’m known for my fresh cut fries & lemonade. Having a flexible menu also allows me to customize any private catering event.

So I’ve tried to stay true to food truck culture.
